This week’s basket (01.09.16)

It is a very nice basket this week again that we prepared! Each basket weighs about 5,50 Kg. We had great products, in very good condition, therefore we had a lot of leftovers. It all went to the local Voedselbank. We unfortunately didn’t have time to give some fruits to the local school.

So, What’s in it?

  • a pack of beetroots
  • some grapes
  • 2 cucumbers
  • 2-3 grapefruits
  • 4-5 apples
  • 1-2 limes
  • 2-3 turnips
  • 6-8 tomatoes
  • 1-2 avocados
  • 1 pepperbell
  • 1 chicory
  • 3 bananas
  • a handful of hot peppers

Your Recipes

Thank you Aurelie and Pierrette for sending me your recipes with the products of the baskets.

Aurelie made marinated peppers and Pierrette a guacamole and a smoothie. Let’s see how they made it.

Marinated peppers

Ingredients:

  • 2 red or yellow peppers
  • 2 cloves garlic, sliced
  • 1 red chili, sliced
  • 1 teaspoon cumin
  • 1/4 cup extra virgin olive oil
  • salt and pepper

Directions:

  1. Preheat the oven to 200 °C. Place the whole red / yellow peppers in the oven directly on the rack. Roast for about 15 minutes, turning if needed, until the skin is well scorched. Immediately place in a bowl covered with plastic wrap or in a paper bag, and allow cooling.
  2. Remove the skins from the peppers by rubbing with your hands, and rinse under cold water. Cut in half, remove stem and seeds, then cut into strips.
  3. Place peppers into a serving bowl, and stir in the garlic, red chili, oil, cumin, salt and pepper.

Let peppers absorb flavors for 12 hours in refrigerator.

Serve as part of an antipasto plate or with goat cheese and sliced baguette.

Guacamole

Simple and delicious recipe:

  • 2 avocados
  • 2 limes
  • 1/2 onion
  • coriander
  • salt

Chop the onion and the coriander thinly. mash the avocados and gently blend all the ingredients together. Salt to taste et voila!

Smoothie

Blend apple cucumber and grapes. Pour in a glass and Enjoy!
