We often get get mangos and pineapples in our basket. Here is a simple recipe to use them together. Thanks to Vidya, a dear friend and a great rescuer, for sharing this recipe!

Tropical smoothie

Ingredients (serves 4):

  • 1/2 pineapple, chopped in chunks
  • 1 large mango, skinned and chopped in chunks
  • 1 can of coconut milk. You can also use creamed coconut, which is available in most supermarkets in the Asian section, dissolve one slab in a cup of hot water, and blend together with the fruits.

Directions:

Blend everything together in a high speed blender. The resulting mixture will be quite thick, add some water till the desired consistency is reached.
